Going to side with the AT-ST in the versus section – while the AT-ST evidently wasn’t the most stable platform, the ED-209 spectacularly fell down the stairs in RoboCop, which makes me think it’d really struggle if the battle occurs on any surfaces that aren’t perfectly flat.

I had not even thought of that… very good point. Wookieepedia claims the effective range on the AT-ST blasters is 2 kilometers, so I think and ED-209 out in the open might be a sitting duck against a good gunner…
My love for ED may be fading…

Keep in mind the ED-209 is a robot. Without a driver the AT-ST is just a big piece of metal.
